Week 16: Garlic Lamb Chops

Despite the fact that I had no motivation to cook this week, I chose to make a dish that was way out of my comfort zone. I had a big craving for lamb and since I’ve never made lamb before, I chose this basic recipe which required a few ingredients and almost no prep time.

Meat, that is not chicken or ground up is a real challenge, since it usually ends up so dry you have to drink water to swallow the food. So here I go, in my kitchen with some lamb chops and my laptop.

The recipe called to mix together minced garlic, olive oil, a little salt and pepper. Then coat the lamb chops in the mixture. That’s it, that’s the preparation, and into the cast iron skillet they go!


After about 5 minutes on one side, using tongs, I flipped the lamb chops over to the other flat side and let them cook for another 5 minutes.

I continues to flip the lamb chops every couple minutes to make sure they were fully cooked and that each side had a sear to it.

The recipe didn’t call for this, but I found some dried thyme and decided to add it to the skillet. This added a little color to the lamb and it added a subtle flavor that enhanced the dish.

After about 20-30 minutes of cooking, my lamb chops were done, and without a meat thermometer I prayed that we wouldn’t get food poisoning from them. I also hoped that they weren’t over cooked and that they tasted good! You know, everything you hope for when you are cooking dinner!

To add some color to the plate, and a vegetable, I made spaghetti squash. Once the squash was cooked I sautéed up some red onions and cherry tomatoes, seasoned with salt, pepper and garlic powder, and then mixed it all together in some olive oil.


This dish, I must say, was one of my best. I literally wished I had 5 more pieces of lamb. The cherry on top was that my boyfriend, who usually cooks all the meat in our home, told me it was the best lamb he’s ever had. CAN YOU BELIEVE THAT?? THE BEST LAMB!

Wish this was the last meal of my challenge to end on a high note… maybe I will just make it again for week 52!
