Week 18: Mac and Cheese

This week I needed comfort food. It has rained for almost 3 days straight and the only thing making today better is a delicious dish of warm and gooey mac and cheese!

I am typically a boxed mac and cheese kinda gal, but after this meal, I don’t think I can go back. I used this mac and cheese recipe as my framework and added a few other ingredients to take my dish to the next level. Okay I have been watching too much food network.

With my pasta cooking, I decided to finally use my cheese grater, to shred sharp cheddar cheese. My grater has 6 sides and I have no idea what any of the other sides are for, but the one I picked made perfectly grated cheese.

Next it was time to make the cheese sauce. I mixed together the garlic and butter, then added the onion powder, milk and flour. Whisk until smooth, and then add 3 cups of cheddar cheese it thickened up and turn it into a cheese sauce.

To add a little twist, I finely chopped up some broccoli pieces and threw a heavy handful into the sauce and mixed it well.

Once the pasta is cooked to your liking, and the sauce is fully mixed, it is time to combine them. In a big mixing bowl pour in the pasta, cheese sauce and 3 additional cups of shredded cheese. Mix it all together and then pour it into a baking dish.

Then combine bread crumbs and melted butter and spread on top. The two cups of breadcrumbs was too much for my dish so I opted to lightly cover the top and then toss the rest. That way it wouldn’t be 50% noodles and 50% breadcrumbs.

After baking at 400 degrees F for 25 minutes, my dish was bubbling a little which meant it was cooked to perfection. I sprinkled Scallions on top (for aesthetic purposes) and it was time to eat!

If you want the breadcrumbs crispier, you could broil the dish once completely cooked. If you don’t want the breadcrumbs, you could sprinkle more shredded cheese on top and broil it to make a crispy top.

Look at that beauty! The breadcrumbs were light and the cheese sauce, while it looked heavy, was not too rich.

This meal definitely makes gloomy rainy days better. I served this with a side salad to make the dish a little more balanced.

Ultimately, I am going to get rid of every boxed mac and cheese I have, because this is the only kind I want from now on!
