Week 21: Kale Summer Salad with Poppy Seed Dressing

When the weather gets warm, that last thing I want to eat is something hot and heavy. So this week I decided to try my hand in making a salad dressing, to dress a delicious fruit filled summer salad. There is something so refreshing about vegetables and fruits mixed together, and it truly is one of my favorite summer meals.

To start I decided to make the salad dressing. I followed this recipe for the poppy seed dressing:

  • 1/3 cup mayonnaise
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppy seeds

I whisked together the 5 ingredients to make a delicious creamy dressing which would be tasty on any salad!


With my dressing mixed, it was time to build my salad. I chose to use kale because I find that it is more filling and is more nutritional. As for what makes this salad, a summer salad? It is obviously all the ingredients!


I picked sweet fruits to counter act the bitterness of the Kale. In the salad was about 4 cups of kale,  1 avocado, 1 honey crisp apple, 1 asian pear and a cup of blueberries. In addition to the fresh fruits and vegetables, I sprinkled in some cranberries, sliced almonds, and I added a half cup of cooked quinoa.


With the quinoa cooked, dressing whisked together and the avocado, apple and pear diced up it was time to mix it all together.


This salad was absolutely delicious and extremely filling. The ingredients mixed together perfectly and the dish was not too sweet or too bitter. Also, despite being covered in dressing, the kale did not get soggy, so I was able to eat left overs the next day for lunch!
