Week 26: Zucchini Pizza Boats

This week I was craving pizza, but also wanted to be healthy. So my solution was to make these absolutely delicious zucchini pizza boats.

I came across the idea of a zucchini boat while sifting though pinterest, and there are a thousand different zucchini boat dishes you can make. When I saw a bunch of other people making pizza boats, I knew this was the dish for this week.

I didn’t actually use a recipe this week, as I make my own tomato sauce and I have cooked with zucchini enough to know how to prepare it.

First thing I did for my dish was make my tomato sauce. The pictures below show the three main steps.

  1. Place 1/4 cup of avocado or olive oil in a sauce pan over medium heat and add 1 Tablespoon of minced garlic. Let cook for 2-3 minutes.
  2. Add a can of crushed tomatoes, and 2-3 tablespoons of Italian seasoning.
  3. Mix together and let simmer for about 1 hour.

**You can add salt, pepper and more seasoning for desired flavor**

 

 

While your sauce is simmering, it is time to prepare your boats.

I used 4 medium green zucchinis for my dish, and started by thoroughly washing them, since you are consuming the skin. Next, cut off both ends and then split the zucchini in half. Using a spoon scoop out the seeds in the middle, and ultimately you with end up with a scooped out zucchini, or your boat!

 

 

Then place all of your boats on a lined pan and place in the oven set at 350 degrees for about 3-5 minutes to release some of the moisture.

After those few minutes, take them out and start to assemble your pizza boats!! First fill each of the boats with tomato sauce, because lets be honest the sauce is a critical component of a perfect pizza.

Now it is time for the toppings!!!!

You can be as creative as you want for this part. I first covered all of the boats with Mozzarella and Parmesan cheese, because along with the sauce, adequate cheese is a critical component of a perfect pizza.

For these I decided to do 4 different topping variations: the top left two are red, orange and yellow peppers and red onion; the middle top are the peppers and onions with pepperoni pieces (supreme boat); the top right is 4 cheese (added monetary jack and cheddar); bottom two are just pepperoni.

Take one last look at your beautiful creations, and into the oven they go. I increased the temperature to 400 degrees, and let them cook for about 10 -15 minutes, or until the cheese turned golden brown.

After those 10 -15 minutes, the zucchini will be soft, the cheese extra gooey and looking at them you will most likely be salivating.

The best way to eat this was with a fork and knife, I know not proper pizza eating technique, but definitely less messy. So stuff your boats with as much as you want and enjoy this delicious twist on a classic dish.

    1. Thank you! These are a great dish to make with kids; they can be unique and add whatever toppings they want. Plus the benefit of using a zucchini is you don’t have to make the crust, and it’s a much healthier option!
