Week 32: Spaghetti and Meatballs

This week I decided to take on a classic – Spaghetti and Meatballs! I chose this dish because I am battling a cold and when I’m sick, all I crave is soup and comfort foods.

This dish is surprisingly easy and did not take very long to make. The longest process is the sauce, as it should simmer for about an hour. But if you utilize that hour to make the rest of your dish, then the whole cook time is about 1 hour.

Tomato Sauce

I have used this recipe for numerous dishes as it is whole 30 compliant, super easy to make and delicious! On the blog it was used for Week 26: Zucchini Pizza Boats.

  • ¼ cup of avocado or olive oil
  • 1 Tbsp minced garlic
  • 1 Can of crushed tomatoes
  • 3 Tbsp Italian seasoning
  • salt and pepper to taste

First thing I did for my dish was make my tomato sauce. The pictures below show the three main steps.

  1. Place ¼ cup of avocado or olive oil in a sauce pan over medium heat and add 1 Tablespoon of minced garlic. Let cook for 2-3 minutes.
  2. Add a can of crushed tomatoes, and 2-3 tablespoons of Italian seasoning.
  3. Mix together and let simmer for about 1 hour.

**You can add salt, pepper and more seasoning for desired flavor**

The next step in the dish is to make your meatballs. This process is very easy, and I followed this recipe to know exactly what should be mixed together to make the perfect meatball. I did switch up some ingredients; I used almond flour instead of bread crumbs, and I did not use parsley.

Start by measuring out all of your ingredients:

  1. Preheat the oven to 400 degrees. Then Line a baking sheet with foil and spray with a non-stick cooking spray
  2. Add the ground beef  to the mixing bowl, and gently with your hand combine all the ingredients. Do not overwork the mix as you want your meatballs to be light and airy.
  3. Once mixed, form 1 inch balls and then place on the baking sheet about 1 inch apart.
  4. Place in the oven for about 20 minutes. Feel free to flip them half way through it you would like.

Once you place your meatballs into the oven, it is time to start your pasta. Boil your water and then place whatever type of pasta you like. I used thin or angel hair pasta for my dish.

The pasta should cook for about 10 minutes, but feel free to taste a piece of cooked pasta to determine if it is the right consistency for you. Ideally, the timing of your pasta should match perfectly with the cook time of the meatballs.

Plate your dish

Once your meatballs are fully cooked and your pasta is cooked the way you like it, it is time to plate your dish.

Start by putting a nice even layer of pasta down, then spread about two big spoonfuls of your homemade tomato sauce. Top your pasta off with a couple of your fresh out of the oven meatballs.

Sprinkle some oregano and more Parmesan cheese on top, and your dish is complete!

Buon Appetito!
