Week 52: Beef Ribs and BBQ Sauce (Paleo)

My year long resolution has finally come to a close. Even though I have successfully completed 52 meals, this is not the end of my cooking! I have loved this entire process and hope to still blog regularly with some fun dinners and maybe expand into baking!

Since this is the final week of my 52 week resolution,  I decided that this will be a redemption week! I made beef ribs back in week 12, but I had some difficulty with cooking them through. This week, I did not have this problem!

I even surprised myself and made my own BBQ rib sauce.


This dish was shockingly easy to make, and it was definitely a successful redemption!

Prepare your Ribs

First, you should preheat your oven to 300 degrees.

Next you need to separate your meat. I bought a whole slab of ribs that had about 9 bones in it. So everything would cook evenly, I cut the slap of ribs in half.

With your ribs separated, you can now season the meat. The seasoning rub is:

  • 1 tsp pepper
  • 1 tsp Lawry’s seasoning salt
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder

Mix those ingredients together and then coat both sides of your ribs so the flavors can be fully absorbed in the meat as it cooks.


Once your meat is seasoned, wrap each piece in aluminum foil and place on a baking sheet. The foil will hold the moisture in and prevent the meat from drying out.

Then place the ribs into the oven for 2 1/2 hours.

Make the BBQ Sauce

When there is about 15 minutes left on the timer for your ribs, you can start to make the sauce. This is more of a tomato BBQ sauce rather than a sweet and smokey one. But it really tasted good on the ribs!

Over medium heat, you want to combine:

  • 8 oz tomato sauce (make sure nothing is added to it)
  • 1/2 cup of water
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/2 tsp raw honey
  • 1/2 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder

Mix the ingredients together, then let it sit on low heat until the ribs are done cooking.

Coat and Finish Cooking the Ribs

Take the ribs out of the oven and carefully open up the aluminum foil packets. There will be a lot of juice in them.

Also, don’t be alarmed that the meat shrinks up substantially. This is common with beef ribs. If this is a problem for you, I would recommend getting the beef from a butcher as that might result in more meat on the bones.

Remove the foil, and transfer the rib slaps to one baking sheet. Using a basting brush, coat the ribs with your BBQ sauce. With a nice layer of sauce, you can place the ribs back into the oven for another 5-7 minutes.


After those additional few minutes, the sauce should be baked into the ribs and will enhance the flavor. Take the ribs out of the oven and drizzle more BBQ sauce on them. At this point, your ribs are ready to be consumed so get ready to enjoy some tender, fall of the bone beef ribs!

You can enjoy this dinner with a baked potato, brussels sprouts, salad or even make this at a family BBQ and serve it with some potato salad and macaroni salad!

img_3794.jpgThese were just as good as left overs and the meat literally slid off the bone! I definitely felt like this dish ended my 52 week resolution with a flavorful bang!
