Lobster Roll

The moment my fiancé revealed that he had never had a lobster roll, I knew I had to make them for him!

While there are different types of lobster rolls, I chose the the New England style with a buttery hotdog bun, mayonnaise base, and a few other additions to put my own twist on this classic.img_4076.jpg


To my surprise this meal was very easy. There are a few ingredients, and the lobster cooked very fast.

For this dish, you will need:

  • 3 lobster tails (4 oz each) or 1 whole lobster
  • Hot dog roll or club rolls
  • 2 sticks of celery (Chopped)
  • 3 Tbsp mayonnaise
  • 1 tsp honey
  • 1 tsp lemon juice
  • 1 tsp chives
  • 1 tsp old bay seasoning
  • butter for rolls

I couldn’t cook an entire lobster, so instead I used three lobster tails for my dish. When you buy them fresh, they should be a a pale orange and black coloring. They will not turn red until cooked.img_4015.jpg

Start by boiling a large pot of water. Once at a rapid boil, lower the heat a little to a soft boil. Then one at a time, place each tail into the boiling water. I followed these times for cooking my tails:

Since my tails were 4 oz each, I set a timer for 5 minutes.img_4018.jpgYour tails will turn bright read almost as soon as they are in the water, but keep them in until the timer goes off. Once the 5 minutes are up, use tongs or a strainer to remove them from the water, and set them aside on a plate to cool. The tails may be curled up from the water but gently try to straighten them out so they are easier to work with.

While the tails are cooling, you can prepare your sauce. Start by chopping two sticks of celery, then mix them together with the mayonnaise, honey, lemon juice and old bay. Once fully mixed, set aside.IMG_4026.JPGWhen your tails are cooled, place them on a cutting board. You are going to butterfly the tail by cutting through the back of the shell. Cut most of the way down, but do not cut all the way through the bottom.img_4034.jpgThen pull back each side of the shell. Since the shell is hard you will need to use a little force.
img_4035.jpgLoosen the lobster meat from both sides of the shell, and then it should be easy to pull all of the meat out of the tail at one time.

Repeat those steps for all three tails. Then cut the lobster meat into fine pieces and mix it together with the mayonnaise mixture.img_4045.jpgWhen your lobster roll filling is complete, take your club roll (or hotdog bun) and cut them on the top rather than on the side. You now want to take some butter and spread it on the inside of the bun and the outside of the bun. Place in the oven at 350 degrees for about 5 minutes or until the bun is golden brown.IMG_4064While the buns are hot, fill them with your lobster filling. Then sprinkle chives on top and some more old bay.

The three tails made two hearty lobster rolls, so adjust the quantities if you need to make more.IMG_4077Ultimately these lobster rolls turned out perfectly, and I wanted more than one! Serve these with some fries or some roasted vegetables. Enjoy!
