I got this idea from a green pizza I saw online and figured I could put my own twist on this. I beefed this pizza up and made it a true veggie lovers pizza with 4 vegetables, two cheese and a homemade pesto sauce. I made it Sunday night and made it again Thursday, it is that good!
To start, you can either make your dough, buy a dough ball, or buy a premade crust. My grocery store didn’t have any dough balls left, so I opted for the premade crust. Hey, just because I like cooking doesn’t mean I have to always make my dish super complicated.
Here are the ingredients you will need:
- Dough ball or premade crust
- 1 head of broccoli
- 1/2 onion
- 1/2 can of sun dried tomatoes
- 1/2 can of quartered artichokes
- 1/3 cup of feta cheese
- 1/2 cup of mozzarella cheese
- ** I added spinach to my second pizza, and it was soo good**
- 1 cup of fresh basil leaves
- 1-2 cloves of garlic
- 1/4 cup pine nuts
- 1/2 cup of olive oil
- 1/4 cup grated Parmesan cheese
Alright, so get all your ingredients prepped and you are ready to start your dish!
Sautee onions and broccoli
I love sautéed onions and broccoli, because it gives them more flavor and they are already cooked so it helps to ensure that everything will be cooked evenly. Drizzle some olive oil or oil of you choice and stir until everything is coated. the onions should turn a little translucent and the broccoli should become bright green. Once they are cooked, you can set them aside until you are ready to build your pizza.
Make the Pesto Sauce
In a food processor, I put a whole package of basil, 1/4 cup of pine nuts and the minced garlic. Then add about 1/4 cup of olive oil. Put the lid on and turn the processor on Low.
While it is blending everything together, you can add the other 1/4 cup of olive oil. Once the sauce is blended to your desired texture, stop the processor, and transfer it to a bowl. Add the parmesan cheese and mix everything together.
Build your pizza
Start by preheating the oven. I followed the instructions of my crust and set my oven to 425 degrees. While the oven reached temperature, build your pizza.
Start by putting a layer of pesto on the crust.
Next put a layer of shredded mozzarella cheese, and then add your sautéed broccoli and onions.
Then you can add the sun tried tomatoes, artichoke hearts and crumble feta on top.
At this point, your pizza is almost ready, but I decided to jazz us the crust. spread some olive oil on it and then sprinkle some parmesan cheese on top.
Now your pizza is ready to go in the oven for about 10 minutes, or until the crust gets a little golden brown.
This is my new go to pizza! So flavorful and while it may not be the healthiest, look at all the veggies you are eating! Life is all about balance! 🙂
