For all my vegetarian followers, or those who enjoy middle east cuisines, this week I made a baked Falafel that is out of this world! Most of the time they are deep fried but I wanted to make these a little healthier.. plus then you can put more sauces on them without feeling guilty!

I thought this dish would be difficult to make but truthfully, chickpeas are very easy to work with!

For this dish, you will need:

  • one cup of dried chickpeas (I like this process better than canned chick peas) and you will soak them over night
  • 2 Tbsp minced garlic
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper
  • 1/2 tspn salt
  • 1 egg
  • olive oil spray

As the ingredient list states, I used a cup of dried chickpeas, and submerged them in water for at least 12 hours. You would expect the chickpeas to get soft, but nope, they stay hard the whole time. If you prefer to use canned chickpeas, then just skip this step.

Next you want to pull out all of your seasonings and measure them out.img_4630.jpgDrain the water, and dry the chickpeas a little bit. Then transfer them to the food processor, and process them until they are small pieces but not completely minced.

At this point, you will add all your seasonings (cumin, coriander, cayenne, salt and pepper), baking soda, minced garlic and the egg.

Use the pulse function until everything is mixed together. At this point you can transfer the falafel mixture to a large bowl so it is easier to use. If you don’t want to clean something else then feel free to work out of the food processor bowl.IMG_4644.JPG

Now it is time to form the falafel balls, but first preheat the oven to 400 degrees F.

While the oven reaches temperature, take a large baking pan and cover it with parchment paper, so the falafel’s won’t stick to it. You can also use foil and spray it with  olive oil spray.

Using a cookie scoop or a large table spoon you can mold your falafel’s into balls. They should be about 1.5 inches long and place them about 1 inch apart on the baking sheet.IMG_4647.JPG

Once they are lined up, spray the tops of them with some of the olive oil spray. You can also spread olive oil on them if you don’t have the spray. They should bake for about 15-20 minutes or until golden brown.

Once they are finished baking is is time to build your sandwich. You can use Pita bread or a wrap. My grocery store didn’t have large pita’s so I used Naan, which is pretty similar and worked perfectly.

I started by toasting the Naan, then covered it with a thin layer of hummus.IMG_4658

Next, add a little bit of lettuce, and place your warm out of the oven falafel on top.img_4661.jpg

Next you can add some chopped tomatoes, chopped cucumbers and maybe some onions. img_4666.jpg

Then top it off with some Tzatziki sauce or some Tahini sauce. I used Tzatziki and it was delicious.img_4679.jpg

So many fun flavors, and various texture between the crunchy cucumbers and crispy falafel. Enjoy!
